Healthy Yeast Bread

I know we seem to be living in a zero-carb world today, but honestly, I still like a little bread or crackers with my lunch, particularly if they are homemade. Well maybe only, if they are homemade!

I grew up eating cheese and wholegrain bread with fruit nearly every day. Okay, so the bread was store bought and probably full of preservatives, but it was what I knew and did.

Now, I am older, wiser, and healthier! I make my own crackers or breads because I know exactly what is going into them.

I like knowing that I can control the addition of healthier ingredients that allow me to justify my carbs at mid-day, along with other healthy things to eat with it.

Can you believe I even make my own Orange Marmalade to eat with my breakfast breads, thanks to a British hubby that got me hooked on marmalade.

Even though I do add my Mediterranean touch to the flavor with Orange Blossom!

Spelt Flour

Spelt is my new favorite flour to use for much of the baking I do in my kitchen.

Why? The flavor alone has won me over. Nutty and slightly sweet, but it is the rustic texture I am loving in both yeast breads and quick breads.

Whole-grain spelt is a great source of fiber. The light brown color of the flour tells me it has been minimally processed, certainly not bleached and less tampered with, and I like that about my flour. 

I also like knowing that spelt in an ancient grain, used in Middle Eastern cooking, which led me to try making Turkish Simit Bread, a beautiful street-food bread covered in sesame seeds.

Spelt and Kefir Yeast Bread

I have tried swapping out wheat flour using other types of flour, such as nut flours, or legume flours, which I like, but often need help in rising.

For this reason, I will often make my denser flour, yeast breads, using potato water (a small potato boiled in water and cooled), to rise quickly.

This spelt kefir yeast bread recipe is just as easy as any yeast bread preparation, but the results are so much more satisfying.

  • Loaf pan


  • 2 tsp Instant yeast
  • 2 tsp Sugar
  • 1/2 cup Water
  • 1 cup Kefir
  • 1/4 cup Olive oil
  • 4-5 cups Spelt flour, as needed
  • 1 tbsp Salt


  • In a large bowl mix yeast, sugar, and water together and let it sit five minutes to dissolve yeast.
  • Add kefir, oil, and a little flour and stir to make a batter.
  • Add salt, and slowly fold in flour, stirring until it becomes too stiff to stir, of which you begin to work it with your hands, adding flour and kneading until dough is no longer sticky.
  • Cover in an oiled bowl and let sit in a warm (not hot) place until it rises, about 1 hour.
  • Preheat oven to 400
  • Punch down the risen dough, dust a bit more spelt flour onto a flat surface folding the dough several times over the flour. Place in a loaf pan, cover and let it rest another 30 minutes.
    Brush a little olive oil on top, sprinkle a pinch of salt and bake until golden and firm, about 20 minutes.
