For me, preserving figs has become a late-summer ritual. My trees produce far more fruit than we could ever eat fresh, so every season I gather baskets of ripe figs and turn them into homemade jam. Some batches become a traditional sweet fig jam that’s wonderful on warm biscuits, stirred into yogurt, or spread over sweet bread. Other batches get a touch of chili pepper, creating a savory fig jam that’s spectacular alongside cheeses, roasted meats, grilled vegetables, and charcuterie boards.

  • Step 1: Prepare the Figs – Wash the figs thoroughly, remove the stems and cut larger figs into quarters.
  • Step 2: Combine Ingredients – Place the figs, sugar and lemon juice into a heavy saucepan. If making the savory version, add the chili pepper now.
  • Step 3: Slowly Cook – Bring the mixture to a gentle simmer over medium heat, stirring occasionally as the figs begin releasing their juices.
  • Step 4: Mash the Fruit – Once softened, lightly mash some of the figs while leaving others chunky for a rustic texture.
  • Step 5: Reduce – Continue simmering until the jam thickens enough to coat the back of a spoon. As it cools it will continue to set naturally.

From My Garden

Every Meal Has a Story

Here’s something that makes figs even more fascinating; they aren’t technically a fruit at all. Figs are actually a flower. This hidden-flower structure is part of what gives fresh figs their luscious, honeyed texture and naturally jammy consistency, making them perfect for both sweet and savory recipes.

Equipment

  • Small food processor or blender
  • 16 oz. Mason jar
  • Medium saucepan

Ingredients

  • 2 cups Fresh Figs rough chopped
  • 1/4 cup Sugar
  • 1/4 cup Bourbon
  • 3 Garlic cloves for savory jam
  • 4 Chili peppers, small for savory jam
  • 2 tbsp Balsamic vinegar
  • 1/2 tsp Salt

Instructions

  • For the Sweet jam only, place the figs, sugar and bourbon in a medium saucepan and simmer on low heat for 20 minutes. Cool and puree.
  • For the Hot jam add the figs, sugar and bourbon to the saucepan along with the garlic, chili peppers, balsamic vinegar and salt. Simmer on low heat for 20 minutes. Cool and puree.

  • Store in closed containers in the fridge for a week or in zip bags in the freezer for several months.

    This fig jam is absolutely amazing. I made both the sweet and the savory and love them both but the savory one is wonderful on pork chops, with cheese, and just eaten out of the jar! Thanks for the recipes. I may try adding some cinnamon and/or cardamom to the sweet one. I have more figs and half a bottle of bourbon so why not!
