Simple Pleasures Of Tea Time

Lately, these days, I’ve been writing eight hours a day. I make myself stop the ‘busy’ of my mind, make tea, a nibble, and go sit where I can hear birds, smell earth, and think.

These moments, very different from coffee moments, help me make order of my mind.

I’m not sure why it works with tea and is different from coffee. Maybe because I’ve always relied on coffee to crank me up, give my brain a buzz.

While coffee, for me, is something I depend on to fuel me into action, tea is quite the opposite, no matter what type of tea.

Tea time, is a time I use to sit and gather my thoughts, visit with a friend, or simply regroup for the rest of the day.

Who doesn’t like something to nibble when sipping on tea! When planning ahead for a quiet tea alone, I will make these very simple, almost healthy tea time nibbles.

However, when with a friend or guest, I will often opt to make a special scone to share.

While other times, I will set aside a tea time moment and call it ‘lunch with friends’. For these times, I want something a little more substantial, yet dainty.

I don’t consider myself a writer. Many of you have encouraged me to write the stories I may have whispered to you.

While I have tried several times throughout my life, I’ve never been able to push through. But, I have finally done it!

Books? Yes, I have published four, now working on a fifth, however I took a detour during the summer months to work on something new.

I’m challenging all the visual storytelling abilities in my mind’s eye and writing a script for a television series.

It’s amazing how simply visualizing my stories in my mind, just as I would want to see them on film, just works for me.

I am able to see it, hear it, smell it, taste it and feel it, something that often works when I am creating short video stories.

A frustrated filmmaker is what I suppose I really am and tea time is something I rely on when my mind’s eye is on pause!

Easy Almond Biscuits For Tea Time

I’m a bit of a health nut, which often inspires the recipes I create.

Since I’ve been cooking from scratch all my life, I’ve developed quite a repertoire of healthy recipes, which is probably why I started this blog in the first place.

And so, I wanted to share a quick, ‘healthyish’ cookie, I find perfect for tea time, or a quick afternoon nibble.

Almonds are always in my pantry, as you may already know, since I make my own almond milk, almond butter and almond cheese.

How To Make Almond Biscuits

Being married to a Brit is often cause for confusion when it comes to naming things around the house or things we eat.

Biscuits to hubby are cookies, while biscuits to me are more like a scone, and so I created something that resembles both, in these almond cookie/biscuits!

The 3-ingredient cookies (plus spices), I’ve given you here, could be called an ugly macaron, but I enjoy them with little guilt.

After all, they are mostly egg whites and almond flour with a pinch of sugar.

Once the egg whites are whipped into peaks, the almond flour, sugar and any spice of choice, the batter is ready to bake.

Small dollops on a parchment paper lined baking sheet and the almond biscuits are baked in under 20-minutes.

  • electric hand mixer
  • cookie sheet with parchment paper


  • 3 Egg whites
  • 1/8 tsp Cream of tartar
  • 1/4 cup Sugar or other sweetener
  • 2 cups Almond flour


  • Preheat oven to 350
    Line a baking sheet with parchment paper or use a silicone baking sheet.
  • Start to whip the egg whites.
    Once the egg whites become frothy, add the cream of tartar and continue to whip.
  • When egg whites start to come together, and look light, slowly pour in the sugar while whipping and continue to whip until they stick to the beater.
    Fold in the almond meal.
  • On a parchment lined cooking sheet or silicone macaron sheet, place 12 dollops of batter on the sheet.
  • Bake until golden, about 15-20 minutes.
    Cool on a wire rack and enjoy!
