Tortellini Skewers Make the Best Appetizers On A Stick

There is something quietly joyful about food on a stick.

Not rushed, not complicated, just assembled with care, one piece at a time. A rhythm forms in the kitchen: a tomato half, a fold of salami, the soft curve of tortellini still carrying the warmth of salted water. It’s the kind of preparation that feels almost meditative, like threading together small, edible moments.

These tortellini skewers were born somewhere between a charcuterie board and a summer garden. Bright tomatoes, herb-kissed pasta, and ribbons of savory meat, all gathered neatly into something you can hold in your hand.

They are effortless, yes. But more than that, they are generous.

Make a few for an afternoon lunch, or a full platter for a gathering that lingers into the evening. They wait patiently in the refrigerator, ready when you are.

Tortellini Skewer Ingredients (And Why They Work)

Cheese-Filled Tortellini (9 oz)
The heart of the recipe. Cheese tortellini adds richness and structure while holding up beautifully on a skewer. Cooking to al dente ensures it stays intact and slightly firm for threading.

Salami (6 oz)
Salami brings salt, fat, and depth. When folded, it creates texture and a visually striking “flower” shape that elevates presentation while adding a savory bite.

Cherry Tomatoes (12 oz)
Bright, juicy, and slightly sweet, cherry tomatoes balance the richness of the meat and cheese. Cutting them across the short width gives a clean, rounded finish on both ends of the skewer.

Garden Grown Grape or Cherry Tomatoes

Olive Oil (1/4 cup)
A light coating of olive oil prevents the tortellini from sticking and adds a subtle, silky richness that carries the herbs.

Salt (1 tsp)
Enhances all flavors and ensures the tortellini doesn’t taste flat once chilled.

Italian Herb Blend (1 tsp)
Adds aromatic depth, bringing together notes of oregano, basil, and thyme for that classic Italian flavor profile.

Fresh Basil Leaves
Added just before serving, basil gives a fresh, slightly peppery finish and a beautiful pop of green.

Tools You’ll Need

Large Pot
Essential for cooking tortellini evenly. A spacious pot prevents overcrowding and sticking.

Mixing Bowl
Used for gently tossing the tortellini with oil and seasoning without breaking the pasta.

Ice Bath (Bowl + Ice + Water)
Stops the cooking process immediately. This is key, without it, tortellini can become too soft and fall apart when skewering.

4-Inch Appetizer Skewers
Short skewers (4.7 inch) make these easy to handle and perfect for single servings. They also help with portion control and presentation (6 inch also available).

Serving Platter
A wide platter allows you to arrange the skewers in a visually abundant, layered way, important for both entertaining and photography.

How To Make Tortellini Skewers (Step-by-Step)

1. Cook the Tortellini
Bring a large pot of salted water to a boil and cook tortellini to al dente according to package instructions. Avoid overcooking, as soft pasta will tear when assembling.

2. Stop the Cooking Process
Immediately transfer the cooked tortellini to an ice bath. This step locks in texture and prevents the pasta from becoming mushy.

3. Season the Tortellini
Drain and transfer to a bowl. Drizzle with olive oil, sprinkle with salt and Italian herbs, and gently toss to coat.

4. Prepare the Tomatoes and Salami
Slice cherry tomatoes across their width to create two rounded halves.
Fold each slice of salami in half, then again into quarters to create a layered, flower-like shape.

5. Assemble the Skewers
Thread in this order for best structure and presentation:

  • Tomato half
  • Tortellini
  • Folded salami
  • Tortellini
  • Tomato half

6. Chill or Serve
Refrigerate until ready to serve. Just before serving, tuck a fresh basil leaf onto each skewer.

Absolutely, you can make your own tortellini, and you can fill them with whatever you like. All you need, is to make your own pasta dough, run it through the pasta machine in wide/long strips, and cut the pieces into squares to fill and cook.

Skewers and Sticks Are Great For Easy Make-Ahead Appetizers

When my kids were growing up and we would join friends for picnic outings, while other kids brought Nut-Butter and Jam Sandwiches, I was that mom that packed my kids everything, and anything on sticks. So much easier and efficient!

Skewer sticks keep food easy to pick up and portion out for a few or a large gathering. Here are just a few of my favorite skewers to prepare:

  • Shrimp and Grits Kabob Party Platter – The best of sea and field, with corn grits polenta squares, and spicy grilled shrimp, piled onto pick-up sticks!

  • Kofta Kabobs – lamb and spices packed around a kabob stick, something I had the chance to prepare on Guy’s Grocery Games.
