Ingredients
9ozCheese-filled tortellinior preferred
6ozSalamior smoked salmon
12ozCherry tomatoes
1/4cupOlive oil
1tspSalt
1tspItalian herb blend
Fresh basil leavesas needed
Instructions
Bring a large pot of salted water to a boil and cook tortellini to al dente according to package instructions. Avoid overcooking, as soft pasta will tear when assembling.
Immediately transfer the cooked tortellini to an ice bath. This step locks in texture and prevents the pasta from becoming mushy.
Drain and transfer to a bowl. Drizzle with olive oil, sprinkle with salt and Italian herbs, and gently toss to coat.
Slice cherry tomatoes across their width to create two rounded halves.Fold each slice of salami in half, then again into quarters to create a layered, flower-like shape.
Thread in this order for best structure and presentation:Tomato half, Tortellini, Folded salami, Tortellini, Tomato half.
Refrigerate until ready to serve. Just before serving, tuck a fresh basil leaf onto each skewer.
Notes
Substitutions are easy and of your choice: smoked salmon or marinated mozzarella instead of salami, grilled vegetables, or olives.
