Strawberry Season
When strawberry season finally arrives after a long cold winter of zero fresh fruits, I want strawberries in everything I can possibly get them in!
Just up the street from me is a strawberry farm that lays quietly with black tarp over the sleeping strawberry fields during the winter months. When that tarp comes off, my kitchen is in full swing for my own little strawberry festival of flavors!

Strawberry Vinaigrette
How about a fast salad dressing that is sure to elevate any salad you drizzle it over! If you can’t think of a salad you would make to enjoy strawberry vinaigrette, by all means make this Strawberry Salad with spinach, feta, strawberries and either bacon or smoked salmon!
Fresh strawberries pureed with garlic, chili flakes, white balsamic vinegar, olive oil rosemary and sea salt. The vinaigrette will last one week in the fridge, so don’t be shy, make a jar full for the entire week of fabulous salads!

How To Make Strawberry Vinaigrette
So darn easy! In the blender or food processor, toss a handful of washed and stemmed strawberries, white balsamic or even apple cider vinegar, garlic, chili flakes, yes chili flakes to elevate this vinaigrette with a little heat, salt and fresh herbs, while the machine is running, pour in a little olive oil to emulsify the mixture and you have a fabulous salad dressing!

- Strawberries
- White balsamic vinegar
- Sugar
- Garlic
- Chili flakes
- Olive oil
- Fresh herbs – Rosemary here
- Salt

- Blender or Food processor
- Sauce pan
- Cutting board
- Chopping knife
- Mason Jars
Strawberry Vinaigrette Recipe

Ingredients
Strawberries – 1 cup, chopped
Vinegar – 3/4 cup white balsamic or apple cider
Sugar – 1 tablespoon
Chili Flakes – pinch
Garlic – 2 cloves, crushed
Olive oil – 2 tablespoons
Fresh herbs – 1/4 cup
Salt – to taste
Directions
- Place strawberries, vinegar, sugar, chili flakes and garlic in a small sauce pan and bring to a slow boil. Turn off, cover and allow to sit for 15 minutes.
- Pour into a blender and add olive oil, salt and herbs. Puree until nice and smooth. Transfer to a glass jar. Cool completely. Cover and store in the fridge.
