In my family, I have always been known as the muffin queen, simply because over the years I have created about 25 different muffin recipes, and still creating!

As a single mom of 4, during those insanely disjointed, hectic years of age 6 to 16, with school, hobbies, work and hormones, I needed a friend!

 Muffins became my antidote to madness. My friend. How? I needed a quick, healthy and affordable breakfast, a to-go snack and I needed the kids to be able to help make them. 

And so… I will be sharing one of my beloved muffin recipes with You each and every Friday for your weekend treats, or to get busy making a batch to carry you through the busy week ahead! Yep! 52 Fridays!!

Apples In Autumn

Apple pies are a fabulous way to indulge in the autumn season, but an apple muffin, drizzled in salt caramel and walnuts is a Spectacular was to indulge in autumn apples for breakfast, after school healthy snacks or afternoon tea!

While apples are available much of the year, they are most abundant in the autumn. Many varieties we don’t see throughout the year pop up everywhere at the end of summer here in America. 

While many varieties of apples are sweet for munching and granny smith apples are tart and often used in baking, I would suggest that you try to obtain a few Winesap apples, known for both their sweet and tangy finish, and Stayman Apples (my favorite), for their crisp, tart and totally ‘apple’ flavored apple.

What’s not to love about walnuts! Loaded with fiber, vitamins and minerals and of course known for their antioxidant properties makes walnuts  highly prize with health benefits. 

The meaty rich and delicate flavor of walnuts makes them most desirable for cooking as well as snacking. (I always have a bag of walnuts and raisins in my purse!) So many recipes, both sweet and savory, make walnuts my first choice to have stocked in my pantry. 

Walnut oil extracted from the walnut, is one I use often in cooking. The oil is rich in omega-3 fats, making it a smart choice to incorporate into your daily diet. 

Salt Caramel

Salt Caramel could almost be considered a dessert in and of itself, but it’s so much more. Sugar, when it is melted, becomes almost a syrup, but leave it on the heat a bit longer and it becomes liquid gold!

With only 4 ingredients and a few minutes stirring, the best salt caramel sauce can be homemade and stores in the fridge for nearly one month.

While I rely on muffins for an easy breakfast or healthy snack, I took these Salt Caramel Apple muffins to a family gathering and told everyone they were little cakes. The muffins were a hit!

How To Make Salt Caramel Apple Walnut Muffins

Surely you have already made my luscious Salt Caramel Sauce and have it tucked away in the fridge (not too far tucked or probably with a spoon sticking out of it!), if not, you might need to buy one at the store, or quick follow my recipe and have it ready in 15-minutes. 

Apples will need to be finely chopped, grated on a box grater or popped into the food processor and grated quickly. The rest is easy.

There is a system I usually use when making muffins and it almost always applies: Mix the wet ingredients in one bowl, mix the dry ingredients into a separate bowl, mix them together and there you have it! Muffin batter in minutes.

The luscious flavors of autumn in these apple and walnut muffins or little cakes with salt caramel drizzle and walnuts on top. 

Ingredients

  • Eggs – 3

  • Coconut oil – 1/2 cup, melted

  • Sugar – 1/2 cup

  • Apples – 2 cups, shredded

  • Lemon juice -1 tablespoon

  • Vanilla – 1 teaspoon

  • Baking soda – 1/2 teaspoon

  • Baking powder – 2 teaspoons

  • Cinnamon – 1 tablespoon

  • Allspice – 1 teaspoon

  • Cloves – 1/4 teaspoon

  • Salt – 1/2 teaspoon

  • Flour – 2 cups

  • Walnuts – 1/2 cup, ground

  • Homemade Salt Caramel Sauce – 1/4 cup

  • Walnuts – 1/4 cup, rough chop

Directions

  • Preheat oven to 350
  • In a mixing bowl, toss the apples and lemon juice.
  • Mix in the eggs, oil, sugar.
  • Add the dry ingredients and 1/2 cup of ground walnuts.
  • Place the batter in prepared muffin tins (non-stick spray or baking papers), filling 3/4 full.
  • Bake for 30-40 minutes until tester (a toothpick), comes out clean. Cool.
  • Drizzle the salt caramel sauce across each muffin and sprinkle coarsely chopped walnuts on top.
