Instructions
Preheat oven to 350
Prepare muffin tin with a light brush of oil or non-stick spray.
In a small bowl, toss the apples and lemon juice and set aside.
MIn a large bowl whisk the eggs, oil and sugar until creamy.
Stir in the apple mixture.
Add the dry ingredients and 1/2 cup of ground walnuts.
Place the batter in prepared muffin tins (non-stick spray or baking papers), filling 3/4 full.
Bake for 30-40 minutes until tester (a toothpick), comes out clean. Cool.
Drizzle the salt caramel sauce across each muffin and sprinkle coarsely chopped walnuts on top.
