The types of onions used to make a great onion jam, are not as important as knowing that you simply need lots of onions! As a large mound of onions cook, they shrink down, become caramelized, and their sweet juices will thicken, just as sugar does. If yellow onions, white onions, or a variety of hodge-podge onions are what you have on hand, they will work just fine.

  • Yellow onions – These are the most versatile choice. They caramelize beautifully and create a balanced sweet-savory flavor.
  • Sweet onions – Varieties like Vidalia produce an especially mellow, almost buttery onion jam.

This version of balsamic caramelized onion jam has layers of flavor that go far beyond the traditional recipe.

The sweetness of slow-cooked onions is enhanced with brown sugar and pure Vermont maple syrup, creating a gentle, earthy sweetness. Balsamic vinegar adds brightness and depth, while smoked chili powder and ghost pepper introduce just enough warmth to make the flavors linger.

The result is a savory onion jam that is sweet, tangy, smoky, and slightly spicy all at once. How to use onion jam with heat? Try a schmear on everything!!

So Many Ways To Use Caramelized Onion Jam – Especially With Added Chili Heat

I’ve simmered beef or lamb in it, or spread it on grilled burgerswhich provides so much flavor, little else was needed.

Definitely a great addition to spread on top a small wheel of brie baked in phyllo or a pastry dough.

How To Make Caramelized Onion Chili Jam

This jam couldn’t be easier to make. No special equipment is needed, simply a sharp knife and a saute pan. 

  • Slicing the onions as thin as possible, helps to evenly cook when they are heaped into the pan. 
  • Once the onions are sliced, chop a little garlic and some fresh herbs to toss in for added flavor. I used thyme but any fresh herb of your choice adds brightness to the jam.
  • Saute the heap of onions in a pat of butter with a drizzle of olive oil, a bit of sugar, a drizzle of maple syrup and add the heat of chili peppers  or flakes. 

The processing time is fast, and the medium heat cook time is about 20 minutes to produce the best homemade onion jam. If some of the onions cook too fast, while others are still caramelizing, simply add a little water to the bottom of the pan to keep them from burning. 

Once the jam cools to room temperature, it is ready to serve, be stored in an airtight container in the fridge, or freeze in small batches in ice cube trays for a quick flavoring in soups and stews.

Tips for Perfect Caramelized Onions

Cook Low and Slow – Caramelization takes time. Cooking onions over medium-low heat allows them to soften gradually and develop their signature sweetness without burning.

Stir Occasionally, Not Constantly – Give the onions time to rest against the pan between stirs. This helps them develop those beautiful golden edges that bring depth to the jam.

Don’t Rush the Color – Properly caramelized onions should be deep golden brown and glossy, not pale and soft. This transformation is what gives onion jam its remarkable flavor.

Deglaze for Extra Flavor -As the onions cook, flavorful browned bits form on the bottom of the pan. When you add balsamic vinegar, it loosens these bits and incorporates them into the jam, adding incredible richness.

  • Cutting board – A sturdy cutting board gives you plenty of space to slice your onions safely and comfortably.

  • Airtight jar – Mason jars are always my go-to for an airtight container – Once cooled, store the onion jam in an airtight glass jar. Mason jars are always my go-to because they seal well and keep the jam fresh in the refrigerator while allowing the flavors to deepen over time.
  • Measuring tools – Measuring spoons and cups help keep the balance of sweetness, acidity, and spice just right.
  • Stovetop or burner – All that’s required is a steady burner and a little patience while the onions slowly transform into a rich, jammy condiment.

Ingredients

  • 4 Large onions red onions or other sweet onions
  • 4 tbsp Unsalted butter
  • 1 tbsp Extra virgin olive oil
  • 1/3 cup Brown sugar or cane sugar
  • 3 tbsp Maple syrup
  • 3 Garlic cloves crushed
  • 3 tbsp Balsamic vinegar
  • 1 tbsp Apple cider vinegar
  • 2 tsp Smoked chili powder
  • 1/2 tsp Dried thyme
  • 2 tsp Kosher salt
  • pinch Ghost chili or red pepper flakes at your own risk!

Instructions

  • On a cutting board with a sharp knife, or a food processor fitted with a slicer, thinly slice the onions. 
  • In a large skillet over medium-high heat, melt the butter along with the olive oil.Cover the bottom of the pan with onions. 
  • Add the remaining ingredients, turn down to medium heat and cook until the onions are golden brown, about 20-minutes. Good caramelized onions should glisten and begin to look like a delicious jam. 
  • While different flavors can be added to the caramelized onion jam, the best flavor will come from a hint of sweetness from the onions, and the tartness of the balsamic vinegar. 
  • Cool to room temperature and store in a glass jar or airtight container in the fridge for about a week.

  • A great way to extend the life of this red onion jam, small amounts can be frozen in ice cube trays, once frozen, store the cubes in an airtight container to thaw and use at another time.
