Refreshing, cold cucumber soup from Lemon Cucumbers, made Greek style, with yogurt, lemons, garlic and dill.

Cold Cucumber Soup
Cucumber soup has most often been served in France. Most recipes I encountered, stated that cucumber soup originated there.
Arabs, however, have been making a cold refreshing drink out of yogurt for centuries. The yogurt is most often Homemade Yogurt.
This Middle Eastern drink is known as Ayran. Yogurt, a little chilled water and a sprinkle of salt. It is perfect to sip, on a hot day.
Summertime heat has graced me with an abundance of Lemon Cucumbers, growing in my garden, that will pair beautifully with yogurt.

Cold Refreshing Cucumbers
Freshly sliced for a salad, or cut into rounds, to press over the eyelids, cucumbers are simply refreshing when they are cold.
Cucumbers also contain enough sugar, B vitamins and electrolytes to replenish essential nutrients, which makes it the perfect cold soup for hot seasons.
Bold Greek Flavors
While many recipes for cold cucumber soup are French, the flavors that pair best in a cold cucumber soup are found in Greece.
Tzatziki is a cold cucumber salad that is often served as a sauce with lamb Koftas or other meat dishes.
Cold Greek yogurt, chilled cucumbers, while both light and refreshing, contrast beautifully with the bold bite of garlic, tartness from lemon and brightness from dill. Bold Greek flavors!
How To Make Greek Cucumber Soup
Lemon cucumbers are new to me. Having received a bag of seeds as a gift, I am now passionate to grow these whimsical beauties every year.

First you will need to carefully hollow the cucumber balls out. Slicing off a small amount from the top and a sliver from the bottom, so it lays flat.

Secondly you will cut gently, with a paring knife, around the flesh inside the cucumber, placing the flesh into a blender.
Finally, the remaining ingredients will go into the blender and puree into a light creamy soup. Serve immediately or chill for a little later.

- Small spoon – like a demitasse spoon
- Blender

- Garlic press

Ingredients Needed
- Lemon cucumbers – or regular
- Greek yogurt
- Lemon juice
- Olive oil
- Garlic
- Salt
- Dill

Ingredients
Lemon Cucumbers – 2
Greek yogurt – 3 tbsp
Lemon juice – 1 tbsp
Olive oil – 1 tbsp
Garlic – 2 cloves
Salt – 1/4 tsp
Dill – 1 tbsp plus garnish
Directions
- Hollow out, carefully with a small spoon, the inside of a round lemon cucumber and place the flesh inside of a blender. Save the hollowed cucumbers to be used as the bowl to serve the soup in.
- Pluck a few dill fronds for garnish and place the rest into the blender along with the remaining ingredients. Puree. Pour into small bowls or hollowed cucumber balls, garnish and serve.

Notes
- Regular cucumbers can be used with a decorative small bowl.
- The soup can be kept cold in the fridge until ready to serve but will need to be whisked again before serving. If using Lemon cucumbers, they will last, once hollowed, for an hour in the fridge but not much longer.
