The tradition of baking cookies for the holidays goes back centuries, long before the invention of electric mixers or measuring cups. In medieval Europe, spices like cinnamon, cloves, and nutmeg were precious treasures brought from faraway lands, used only for the most festive occasions. Bakers would mix these spices into simple doughs of butter, nuts, honey, and flour, shaping them into stars, hearts, and animals to celebrate the season.

As the tradition spread across countries and generations, each culture added its own touch, gingerbread in Germany, buttery spritz in Scandinavia, biscotti in Italy, shortbread in Scotland. The pizzelle iron would appear on the counter, its ornate plates ready to press thin rounds of golden batter into crisp, beautifully embossed wafers that looked too pretty to eat, but of course, we always did.

Traditionally flavored with anise, pizzelles have that unmistakable aroma that fills the kitchen with warmth and nostalgia. But what makes them even more delightful is their versatility, a dash of vanilla, almond, or even citrus zest can turn them into something entirely new. And of course, no cookie story would be complete without the most beloved of all, the Linzer Cookie. But mine comes with a Mediterranean twist, a recipe that turns a European classic into something deeply personal and beautifully unique. Instead of the traditional almond base, I use chestnut flour, which gives the cookies a tender crumb and a subtle, earthy sweetness that pairs perfectly with the season.

The filling is where the magic truly happens, a jewel-toned cranberry orange jam infused with cloves, cinnamon, and a hint of orange blossom. It’s tart, fragrant, and just the right amount of festive, glistening through the cut-out tops like stained glass. Once sandwiched together and dusted with a delicate snowfall of sugar, these cookies become little works of art, rustic yet refined, nostalgic yet entirely your own. Middle Eastern Maamoul Cookies

And last, but perhaps dearest to my heart, are the Maamoul Cookies, a beloved treasure from my Syrian heritage. These tender, hand-pressed cookies are as much a part of our family’s story as any heirloom passed from one generation to the next. Each Maamoul is filled with a sweet, spiced date paste, wrapped in a delicate, buttery semolina or flour dough, and pressed into intricate molds that leave behind beautiful patterns, like tiny pieces of edible art.

In our home, Maamoul has always meant more than a cookie. It’s a symbol of welcome, celebration, and togetherness, a cookie served with love to guests, shared with family at holidays, and always made by hand, never in a hurry. The scent of dates, butter, and orange blossom drifting from the oven is the smell of home, of laughter echoing through the kitchen, of stories retold year after year. Even surrounded by all the glittering sweets of the season, these humble, fragrant cookies remain the heart of our table, a reminder that the simplest traditions often hold the deepest meaning.
