Coffee Chocolate Popsicles

A Little Pick-Me-Up For Summer Afternoons

Coffee often marks the beginning of our day, but frozen into popsicles, it becomes an entirely different experience, cool, creamy, and unexpectedly soothing when the temperature climbs.

That’s where these Coffee Chocolate Popsicles find their place.

They’re inspired by the comfort of an afternoon coffee break but transformed into something cool enough for July. Strong brewed coffee mingles with rich cacao and creamy almond milk before freezing into velvety bars that melt slowly in the sunshine. A final drizzle of dark chocolate cracks gently with every bite, adding just enough indulgence without overwhelming the clean coffee flavor beneath.

They’re elegant enough to serve after a garden dinner yet simple enough to keep tucked away in the freezer whenever the day calls for a refreshing pause. More than dessert and more satisfying than an iced latte, they’re the kind of small luxury that makes a hot day feel manageable.

Why You’ll Love These Coffee Chocolate Popsicles

Unlike many frozen coffee desserts loaded with cream and sugar, these popsicles let the flavor of the coffee remain front and center. The cacao deepens the roast notes without making them overly sweet, while almond milk creates a silky texture that freezes beautifully.

Because the recipe uses pantry staples, it’s endlessly adaptable. Dairy milk, oat milk, coconut milk, or cashew milk all work well, and sweeteners can be adjusted to suit your preferences, whether that’s honey, maple syrup, agave, sugar, or blended dates.

The optional chocolate drizzle isn’t merely decorative. As it hardens against the frozen popsicle, it creates delicate shards that contrast beautifully with the creamy interior.

They’re also naturally portion-controlled, making them a satisfying afternoon snack or light dessert that feels like a café treat without requiring a blender full of ice or a trip to the coffee shop.

A Frozen Coffee Chocolate Popsicle Treat That Keeps Well

Often we make a pot of coffee, enjoy a cup, and there the rest sits. So why not put that coffee to delicious use for later in the day! Prepare a batch in advance and keep them frozen for weeks, making spontaneous summer entertaining or afternoon cravings delightfully easy.

Ingredients for the Best Frozen Coffee Chocolate Popsicles

Strong Brewed Coffee – The foundation of the recipe. Brewing the coffee stronger than usual ensures its bold flavor remains vibrant after freezing.

Unsweetened Cacao Powder – Adds rich chocolate notes while enhancing the natural roasted complexity of the coffee.

Sweetener of Choice (dates are my preference)- Whether using sugar, agave, maple syrup, or blended dates, sweetness softens coffee’s bitterness and balances the cacao.

Pinch of Salt – A tiny amount heightens both the chocolate and coffee flavors, making every bite taste fuller.

Almond Milk (or Milk of Choice) – Creates creaminess while allowing the coffee flavor to shine. Coconut milk makes a richer version, while dairy provides classic creaminess.

Melted Dark Chocolate (Optional) – Drizzled after freezing, it adds visual appeal and a satisfying crisp shell that elevates the finished dessert.

Tools You’ll Need

Coffee Maker – A strong brew produces the concentrated flavor needed so the popsicles don’t taste diluted after freezing.

Whisk – Essential for fully dissolving the cacao powder into the warm coffee, preventing clumps and creating a silky mixture.

Popsicle Mold with Sticks – Provides even freezing and easy removal. Silicone molds release especially well.

Measuring Cups and Bowls – Help maintain consistent proportions so each batch freezes with the ideal texture.

Small Spoon or Piping Bag – Perfect for creating thin ribbons of melted chocolate across the finished popsicles without excess mess.

How to Make Coffee Chocolate Popsicles

Step 1: Brew a Strong Pot of Coffee

Prepare 2 cups of strong coffee while fresh and hot.

Step 2: Whisk Together the Chocolate Base

Add the cacao powder, sweetener, pinch of salt, and milk to the hot coffee. Whisk until completely smooth and no cacao remains visible.

Step 3: Cool Before Freezing

Allow the mixture to cool to room temperature before pouring into molds. This helps the popsicles freeze evenly.

Step 4: Fill the Popsicle Molds

Pour into popsicle molds, insert sticks, and freeze for at least 4 hours or overnight until solid.

Step 5: Remove and Store

Release from molds and transfer to an airtight freezer-safe container if storing longer.

Step 6: Add the Chocolate Drizzle

Lay frozen popsicles on a chilled tray and drizzle with melted dark chocolate. Return to the freezer for about 5 minutes so the chocolate hardens before serving.

Yes. The caffeine level depends on the strength and type of coffee you brew.

How long do homemade coffee popsicles last?

Stored in an airtight container, they maintain their best flavor for about one month in the freezer.

More Coffee Chocolate Recipes To Try

There isn’t a season or reason for coffee and chocolate. It’s a ‘just because’ kind of love affair. Holiday seasons roll around, we make coffee and chocolate desserts. Wednesday, hump days, need coffee and chocolate. For this reason, I make coffee and chocolate treats all year!

  • Coffee Mocha Macarons – clouds of egg whites whipped with almond flour coffee and mocha filling that is simply divine.
  • Coffee Chocolate Artsy Cookies – yes artsy, because I made coffee cookie dough and chocolate cookie dough and married them into a checkerboard pattern.
  • Chestnut Coffee Tuscan Torta – a simple cake without icing, made with crushed chestnuts, cacao, coffee and laced with a little rum.
