Heart-shaped Garlic Bread Roasted Grapes and Goat Cheese Spread

Instructions
Bread Peel and chop the potato into small chunks. Place in a saucepan with 2 cups of water. Bring to a boil, lower, cover and cook until potato chunks are soft. Cool completely and puree.
Measure 1 1/2 cups of the potato puree - if there is not enough puree to equal 1 1/2 cups of liquid, just add a little more water. Place the potato water in a bowl. Sprinkle yeast and sugar on top. Let it sit 5 minutes to form a foam.
Add the crushed garlic cloves, the salt 1 tablespoon of olive oil and begin to add the flours, a little at a time, mixing with a wooden spoon until it becomes difficult to stir. With your hands, work in the remaining flour into the dough until it forms a lovely plump ball.
In a large bowl, brush the remaining olive oil around the bowl. Place the dough ball in the oiled bowl, cover and let it sit in a warm (not hot) place to rise. It will rise in less than one hour.
Once it rises, sprinkle a little flour on top, and punch it down. On a floured surface, roll the dough out to the length and width of the heart-shaped pan. Transfer the dough to the pan and press it gently into the edges of the pan. Cover and allow to rest for 20-minutes.
*If spreading the goat cheese and garlic topping when serving, no egg wash is needed before baking. If you will not be serving the bread with cheese spread, you may want a glossy finish on the bread: simply whisk an egg with a drizzle of water and brush across the top of the dough before baking.
Preheat oven to 400. Bake the bread for 18-minutes.
Cheese Garlic SpreadIn a blender or with a whisk, mix the cheese spread ingredients until smooth and creamy. Store unused spread in a glass container with a lid in the refrigerator.
Roasted GrapesWarm a small saute pan on low. Add olive oil, grapes and salt, and heat just for a minute or so turning them gently in the pan until all sizes have been lightly roasted, but not long enough to blister the grapes open. AssembleSpread the cheese across the room temperature bread. Place microgreens, leaves and rose petals of choice on top with the roasted grapes and serve.
