Instructions
Savory Pie Crust
In a large bowl or food processor, combine flour, salt, butter, and grated cheese until it forms a crumbly texture.Add Dijon mustard and egg yolk, mixing until a soft dough forms.Transfer to a floured surface, shape into a disc, and chill.
Roll out the chilled dough and fit it into your pie plate. Crimp the edges and place the pie dish on a baking sheet.
Preheat oven to 350°F.In a bowl or food processor, whisk eggs until light and slightly frothy. Add olive oil, lemon juice, garlic, salt, and pepper. Mix again. Fold in greens and cheese.
Pour the egg mixture into the prepared crust. Top with crumbled or sliced bacon (any variety you prefer).
Bake for 25-30 minutes, or until the center no longer jiggles and the crust is lightly golden. Let cool slightly before slicing.
