Ingredients
3cupsFresh Peaches, juice reservedabout 4 peaches
2 1/2cupsGreek yogurt full fat or low fat
1 1/2cupsPecansrough chopped
3tbspSugar
1 1/2shotsBourbonabout 4 tbsp
Instructions
In a large skillet on medium heat, place 2 tablespoons of sugar to the hot pan, along with the rough chopped pecans. Allow the sugar to melt and coat the pecans, stirring occasionally. Watch that it doesn’t burn.
Once the sugar begins to look caramelized and sticking to the pecans, remove them from the pan, onto a sheet of parchment paper, single layer. Allow to cool and harden.
In the same pan, on medium-high heat, add the remaining sugar, the sliced peaches and as much peach juice as you are able to reserve from the juicy fresh peaches. Gently stir occasionally until much of the liquid is reduced and caramelization appears.
Add the bourbon, stir over heat for a minute more and remove. Cool completely.
Transfer the peach mixture into a bowl. Stir in the yogurt and pecan praline.
Spoon the mixture into popsicle molds, top on, sticks in and freeze for 4-hours or overnight.
Remove from the popsicle mold and store in an airtight container in the freezer and enjoy.
