Ingredients
SCONES
1 3/4cupAll Purpose Flour
1cupOats
1tbspBaking powder
1/2tspSalt
1/4cupSugar
1Egg
1/3cupPlain yogurt
1tspLemon zest
8ozButter softened
1/2cupBlueberries
LEMON GLAZE
1/3cupConfectioners sugar
1tbspLemon juice
1tspLemon zest
Instructions
Preheat oven to 450.
In a large bowl, using a hand mixer or whisk, add the flour, oats, baking powder, sugar and salt and blend.
Add the softened butter and mix until well incorporated, using hand mixer or pastry cutter.
In a small separate bowl, mix the yogurt, egg and lemon zest until well blended. Mix it into the flour/butter mixture and add blueberries. (Blueberries will break up into the batter so it’s nice to set aside a few whole berries to fold in just before baking.
Transfer the batter out onto a parchment paper lined baking sheet and shape it into an 8-9 inch disk. Cut into 8 slices.
Bake for 15 minutes or until slightly golden.
While the scones are baking, whisk together the lemon glaze. While the scones are hot out of the oven, brush the glaze across or gently pour.
Enjoy with clotted cream, cottage cheese, chèvre or simply more fresh blueberries.
