Tea Time Gatherings

Come join my sister and me as we experiment with ways we can gather for afternoon tea, when the ‘times’ challenge us not to get too close.

We planned to enjoy tea and blueberry scones on the veranda, 10 feet apart, and yet still laugh, sip and be sisters.

Early Spring made for the perfect day to set up an afternoon tea time outside.

Certainly, as long as there are tea time scones, hot tea, pretty things to look at and a best friend with you, all the troubles of the world would melt away.

Melt away they did, as did a pat of butter on top of these lovely warm lemon blueberry scones.

You Can’t Have Tea Time?

There are times in life when we can’t spend time with those we love for a variety of reasons, but a few years ago, that reason had nothing to do with time or distance.

I’m sure we each found ways around the obstacles and still created safe ways to have tea with a friend or loved one.

I know I was eager to find ways around the obstacles, and on this day, this special day, Mother’s Day 2020, I did!

Friends Gather For Tea And Scones

Can you believe that exactly seven months before this day, for my December birthday, I gathered with all of my sisters for afternoon tea?

Since it was my birthday, we met up at a nearby British tea room to enjoy sister time, totally unaware of what lurked around the corner of 2020.

Some live close, some far but we love a good ‘high tea’ spread with lots of proper nibbles.

Often, I am the one preparing tea sandwiches, pretty breads or cookies for a tea gathering, but I delighted in having someone else prepare for me.

Homemade Scones

What is a scone, you ask? They aren’t a treat I grew up with, but once I had my first, I knew I had to have them in as many varieties as I could create.

A scone is a baked good, usually made of wheat flour or oat flour, kind-of like a biscuit in that it is risen with baking powder.

Buttery Scones

While cream and/or butter is the luscious fat used in baking scones, they lend themselves to be both sweet or savory.

It’s my thought, that what makes homemade scones superior to all others, is that they are best hot out of the oven, while the flavors are their most intense.

Mother’s Day Tea

Lemon Blueberry Scones

Blueberry scones are the perfect fruit for making a Mother’s Day scone since most fruits are not yet in season.

Lemons are the perfect zing to brighten the flavor of the blueberries.

In some areas, strawberries may be ready for picking but blueberries are what I chose, because a blueberry remains plump and juicy when baked.

Often, I find strawberries or other berries wilt under the heat and the juices escape.

The Tranquility Of Pouring Tea

Preparing Lemon Blueberry Scones

The lovely aspect of scones is that they can be prepped in advance and then popped into the oven 30-minutes before serving, so they can be enjoyed warm.

Although scones are mixed much the same as muffins or cakes, in that a simple blend of wet and dry ingredients forms a batter, scones are a bit different.

Since there is a fair amount of butter in scones, the dough needs to be blended together more like a cookie dough, left to rest a little, then baked.

Wouldn’t you know it; since the bright lemon glaze brushed over these blueberry scones was so refreshing, I had to create a Lemon Mint Scone!

What To Serve With Tea Time Blueberry Scones?

Undoubtedly, if you’re British, you will serve the scones with clotted cream, a lovely thick cream unlike anything we have here in America.

However, cottage cheese, Greek yogurt or chèvre goat cheese is nice with the warm scones, or simply more fresh berries and a cup of hot tea!

Of course the one thing you will want to be sure to enjoy with scones, is Tea, because Tea Time Moments are a wonderful way of stopping the clock!

Indulge in buying a few pretty teapots, and make a special occasion out of serving tea and scones!

Equipment

  • Baking sheet and parchment paper

Ingredients

  • SCONES
  • 1 3/4 cup All Purpose Flour
  • 1 cup Oats
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1/4 cup Sugar
  • 1 Egg
  • 1/3 cup Plain yogurt
  • 1 tsp Lemon zest
  • 8 oz Butter softened
  • 1/2 cup Blueberries
  • LEMON GLAZE
  • 1/3 cup Confectioners sugar
  • 1 tbsp Lemon juice
  • 1 tsp Lemon zest

Instructions

  • Preheat oven to 450.
  • In a large bowl, using a hand mixer or whisk, add the flour, oats, baking powder, sugar and salt and blend.
  • Add the softened butter and mix until well incorporated, using hand mixer or pastry cutter.
  • In a small separate bowl, mix the yogurt, egg and lemon zest until well blended.
    Mix it into the flour/butter mixture and add blueberries. (Blueberries will break up into the batter so it’s nice to set aside a few whole berries to fold in just before baking.
  • Transfer the batter out onto a parchment paper lined baking sheet and shape it into an 8-9 inch disk.
    Cut into 8 slices.
  • Bake for 15 minutes or until slightly golden.
  • While the scones are baking, whisk together the lemon glaze.
    While the scones are hot out of the oven, brush the glaze across or gently pour.
  • Enjoy with clotted cream, cottage cheese, chèvre or simply more fresh blueberries.
