CARROT CAKE

Easter of 2020 I was a Brat! I let this damn Covid-19 rob me of a beautiful day. First time IN MY LIFE I wore Black on Easter Sunday.

NOPE! No more ‘kick-the-can’ attitude for me! Today I took a long drive to where I grew up. Remembered so many beautiful stories and faces from my childhood. Sailboats were sitting still at dock. Few people out. Spring green everywhere. Then I drove to the home where my sisters and I entered into our adult years, and my first 2 children were born: acres and acres of lush farm land only 1 mile from the river where hundreds of boats were docked, quietly. And there it happened… I saw a huge John Deere piece of farm equipment, that iconic bright green and yellow, and a recent HGTV television commercial came to mind, “Life might be standing still right now but the earth is full of life…”
I came home, opened my fridge and there was this bundle of bright orange carrots smiling at me. CARROT CAKE, they whispered? Ohhhh Yeahhh!

A simple recipe with no icing, simply because I am Not interested in wearing that icing when we get out of lockdown. Besides, if you really love a good cake, it’s the cake and not that dang sugary butter mix on top! Right? (wink)

Ingredients – 1 large or 6 medium cupcakes

  • Carrots – 3 cups, peeled and shredded
  • Sugar – 1 1/2 cups
  • Eggs – 4
  • Oil – 1 cup, I used sunflower but your favorite works
  • Yogurt – 1 cup
  • Vanilla Extract – 1 teaspoon
  • Flour – 2 1/2 cups
  • Baking powder – 2 teaspoons
  • Baking soda – 1/2  teaspoon
  • Salt – 1/2 teaspoon
  • Powdered sugar for a finished sprinkle – optional
  • Orange zest for a finished pizzazz – optional

Preparation – Preheat oven to 350, oil and flour baking pan

Whisk the first six ingredients in a large bowl or food processor. Sprinkle in the flour, baking soda, baking powder and salt and mix batter well. Pour into prepared baking pan/pans and bake until tester comes out clean. For this large cake it baked for an hour. Once cool, I dusted powdered sugar and added orange zest on top, but you can use your preferred icing if you wish!
