CHOCOLATE NAUGHTY MUFFINS

What would you say if I told you, you could have ‘naughty’ and healthy all at the same time… Yep! That’s exactly what I thought!!

Deep, dark, rich, earthy, healthy antioxidant raw cacao, sweetened with dates and molasses , fattened up with almond flour and a few eggs to hold these naughty bad boys together, and you will want them for breakfast, lunch and sweet-tooth midnight snack. Mmmmm! Let’s whip up a batch, and store them in your fridge for an entire week of indulgence.

Ingredients – makes 6 jumbo or 12 medium size muffins

  • Eggs – 2 large
  • Almond milk – 1 cup
  • Dates – 6, pitted and rough chopped
  • Molasses – 1/3 cup
  • Almond flour – 2 1/2 cups
  • Cacao – 3 tablespoons
  • Ginger – 1 teaspoon
  • Baking powder – 2 teaspoon
  • Baking soda – 1/2 teaspoon
  • Salt – 1/2 teaspoon

Preparation – Preheat oven 350 – Paper line or non-stick spray tins

Place eggs, milk, dates and molasses in a food processor or blender and puree. Add dry ingredients and whisk until batter comes together. Scoop batter into prepared muffin tins and bake 25 – 35 minutes until center is firm.
