DON’T put those popsicle makers away yet! Cold, Flu and Allergy season is here, which makes this the perfect time of year to make something icy cold to relieve a dry, scratchy, sore throat.


I created this recipe because my own throat was feeling miserable. I can’t express how comforting it was to suck on these frozen, spicy hot, ginger, lemon, honey, herb popsicles. Make them now and tuck them away in the freezer for yourself or a loved one.

Ingredients – Makes 8

  • Lemon juice – from 2 lemons
  • Fresh Ginger – 1 tablespoon, chopped
  • Chili peppers – 2, chopped
  • Sugar – 2 tablespoons
  • Honey – 2 tablespoons
  • Thyme – 1 sprig
  • Pernod, Gin or Vodka – 2 tablespoons
  • Water – enough to make 2 cups of total liquid


Place the lemon juice, ginger, peppers, sugar and 1/4 cup of water into a small pan. Bring to a boil, drop in thyme and simmer for 5 minutes on low. Turn off. Add honey and alcohol of your choice. Stir. Cool and strain into a 2 cup measuring cup. Add enough water to measure 2 cups total.

Pour mixture into popsicle molds and freeze over night. Gently remove and store in airtight containers. Enjoy the Comfort!
