CINNAMON OAT MUFFINS

You came here for a fast, healthy, delicious muffin, not a dissertation as to why they are simply fabulous! So, without further ado, here you are!!

Ingredients

  • Rolled Oats – 1 cup
  • Milk – 2 cups, your favorite milk
  • Molasses
  • Eggs – 2
  • Oil – 1/2 cup, your favorite
  • Sugar – 1/2 cup
  • Cinnamon – 4 teaspoons
  • Flour – 1 cup, your favorite
  • Baking soda – 1/2 teaspoon
  • Baking powder – 2 teaspoons
  • Salt – 1/2 teaspoon

Preparation

Mix the oats, milk and molasses together and let sit 10 minutes or over night. Whisk in the eggs and oil. Sprinkle the remaining dry ingredients on top and mix.  Place in prepared muffin tins (either lightly sprayed with oil, or lined with muffin baking papers).

Bake: 350 for 20 minutes
