Weekday mornings can be so hectic that everyone leaves the home nutritionally unprepared for the day ahead of them! It doesn’t have to be that way if you are willing to give a little of your time on the weekends, (maybe twice a month) to make a healthful batch of granola to start the day with nutrition and delicious flavors.

This easy recipe could be mixed up by one of your children or you, with little to no effort. The ingredients are inexpensive, (with one exception, maple syrup, honey or agave). The batch folds together in minutes and bakes low and slow while you are busy doing other things. When it’s finished, it has the crunch of a cookie and the smell of homemade baked goods.

Stash a few containers of yogurt, (dairy or non) in the fridge. Wash a variety of seasonal fruits. Fill a container with chopped apples, (lemon drizzled over so as not to brown), mangos, bananas, (again with the lemon) or any seasonal fruit you like; and weekday mornings will be so easy you will wonder why you didn’t think of it!

Ingredients – makes about 6 cups


  • Rolled Oats – 3 cups
  • Spelt flakes – 1 cup (or oats)
  • Bran – 1 cup (oat, wheat or rice)
  • Dried fruit – 1 cup (your choice)
  • Nuts – 1 cup (your choice, lightly chopped)
  • Oil – 1/4 cup (olive, coconut, sunflower, your choice)
  • Vanilla extract – 1 teaspoon
  • Maple syrup – 3/4 cup (honey or agave)


Preheat oven to 250. Combine all the dry ingredients in a large bowl and mix. Gently stir in the wet ingredients and continue to fold all the ingredients together until all of the dry ingredients look wet.


Spread evenly on a cookie sheet and bake for 1 1/2 hours, stirring the mixture every 15 minutes so that all the ingredients become evenly roasted. Cool well and store in an airtight container.


Weekday mornings will start off with a smile and a happy tummy providing energy to soar through the day!
