Growing up in a Mediterranean home, we flavored things differently than everyone else I knew. When you’re a kid, for some reason, we are embarrassed to be different. Now, as an adult, I have discovered that the flavors I grew up with, are the best! Real stuff!!
Salads, like most vegetables, always had some variation of this 4-ingredient dressing or sauce. Toss a salad in it, drizzle it across cooked greens or put a little on each end of your favorite sandwich. So easy that if you blink, you will miss the instructions!
Ingredients – makes 1/2 cup
- Lemon juice – 1/4 cup, about 11/2 lemons
- Olive oil – 1/4 cup
- Garlic – 1 clove, pressed
- Thyme – 1 teaspoon, fresh (or other fresh herbs)
Toss it all in a small blender and whirl for 20 seconds until it becomes emulsified and looks creamy. You can also simply put the ingredients into a small mason jar and shake, shake, shake!
