Growing up in a Mediterranean home, we flavored things differently than everyone else I knew. When you’re a kid, for some reason, we are embarrassed to be different. Now, as an adult, I have discovered that the flavors I grew up with, are the best! Real stuff!!

Salads, like most vegetables, always had some variation of this 4-ingredient dressing or sauce. Toss a salad in it, drizzle it across cooked greens or put a little on each end of your favorite sandwich. So easy that if you blink, you will miss the instructions!

Ingredients – makes 1/2 cup

  • Lemon juice – 1/4 cup, about 11/2 lemons
  • Olive oil – 1/4 cup
  • Garlic – 1 clove, pressed
  • Thyme – 1 teaspoon, fresh (or other fresh herbs)

Toss it all in a small blender and whirl for 20 seconds until it becomes emulsified and looks creamy. You can also simply put the ingredients into a small mason jar and shake, shake, shake!

  1. I have thyme plants growing all around my house. I use them for ground cover (and the bees love them!). This simple and delicious dressing is perfect over summer salads, especially with home grown thyme. Thanks for the recipe.

    • Oh my Debi! I had no idea Thyme grew so well. I struggle to keep a few pots going. Perhaps you could share tips that would make them grow better!

  2. Love how easy this is to make! And so versatile too!

  3. I absolutely LOVE that you made this with lemons! I bet it’s so good!
