BLUEBERRY-LAVENDER POPSICLES

If you know me, you know I am a late-in-life rookie gardener. This year I wanted to try my hand at an ‘Herb de Provence’ field, in an area the deer usually beat me to. It worked! I am so excited to see and smell the intoxicating aromas of lavender, rosemary and other herbs.

Today I created an aromatic, sweet, and very purple popsicle! It was so easy to puree everything in the blender, pour into my popsicle molds and wait a day to taste the gifts from my garden.

This recipe makes 8 standard size popsicles and is so easy to do.

Ingredients

  • Yogurt – 1 cup, or milk, almond milk, coconut milk or any other creamy base works well
  • Blueberries – 1 1/2 cup
  • Honey – 1 tablespoon
  • Lavender buds – 1/2 teaspoon
  • Water – 1/2 cup

Preparation

Toss all the ingredients into a blender and puree. Pour into molds. Freeze over night.
