GHOST CHILI ONION JAM

Condiments. Flavor enhancers. The sky is the limit on what makes good food taste Great! So, I set to work in the kitchen to create something I could love on many quick meals that don’t cook long enough to impart flavor or, cook at all. I wanted something a little sweet, definitely sour, and for sure it had to have a kick. Really Kick!

This Ghost Chili Onion Jam is now my favorite condiment to make, and store in the fridge, (up to 2 weeks). It is great on grilled meat or fish. Perfect for burgers. And my new favorite Brussels Slider!

Fast and Easy. Let’s do this.

Ingredients

Yields 12-14 ounces

  • Onions – 4 medium, finely chopped
  • Butter – 4 tablespoons
  • Brown sugar – 1/3 cup
  • Maple syrup – 3 tablespoons
  • Garlic cloves – 3, crushed
  • Vinegar of your choice – 3 tablespoons
  • Smoked chili powder – 2 teaspoons
  • Salt – 2 teaspoons
  • Ghost Chili – A pinch, or at your own risk!

Preparation

Melt butter on a saute pan. Add onions and cook them down until soft. Add remaining ingredients and simmer on medium until the sauce thickens and becomes ooey gooey-like. Cool and store in a glass jar in the fridge. Yum!
