Picky Eaters! Could be your kids. Your grandchildren. The adult in your life. Or… maybe it’s YOU! I have a trick for getting the pickiest eater to eat lots of veggies. It worked for my kids. Works for my grandkids, and it is sure to work for you picky adults too!

The trick is to puree any assortment of veggies, hide them in the meat of your meatballs, and mask them with lots of flavor and cheese! The kids will never see them there, and if you throw a few chilies in there for the picky adult, they will never suspect you are making them a healthy vitamin packed meal!

I use a food processor, but you can use a blender, or perhaps you might want to invest in a small 3 cup size processor. It’s a great appliance for so many uses, small, and affordable!


Makes 1 dozen medium size meatballs

  • *Veggie Puree – 2 cups
  • Ground meat – 2 pounds, your choice. The same or combine a few.
  • Eggs – 2
  • Salt – 1 tablespoon
  • Italian Herb Mix – 1 tablespoon
  • Grated Cheese – ½ cup
  • Bread crumbs – ½ cup – I used panko

Veggie Puree Ingredients

  • Kale or spinach – 2 cups
  • Carrots – 1 cup rough chopped
  • Zucchini – 1 cup rough chopped
  • Onion – 1 medium size, rough chopped
  • Tomatoes – 1 cup – rough chopped (1 large or 10 cherry size)
  • Garlic – 3 cloves

Puree Preparation

Rough chop of the veggies is all you need because the machine will do the rest. Toss them all into a processor or blender and puree to a liquid. What you don’t use for these meatballs can be stored a few days in the fridge or frozen in small batches for future use. You could even use an ice tray to freeze cubes and pop a few cubes into chili or tomato sauce for other recipes.


Preparation for Meatballs

Preheat oven to 400

In a large bowl, mix all the ingredients for the meatballs together, taking care to incorporate the mix well. In a baking dish, roll the meatballs and place them in the dish or pan. Pop them into the oven for 8 minutes. Turn the oven down to 350 and bake another 30 minutes.


Serve with your favorite pasta and sauce. Enjoy on a Meatball Sub. Place on top a pizza. The possibilities are endless but one thing for sure, everything you need in a complete meal is hidden inside these delicious Meatballs!
