Salad on a stick! Sometimes a little salad on a stick is all we are looking for. Easy to pack in lunches. Perfect for a Tapas spread, picnic food, or an appetizer set out for game day when you want your loved-ones, or guests to have a little something healthy. These Caprese Bites, are a take on the traditional Italian Caprese Salad, which is usually mozzarella, basil, and tomatoes. These are made with spinach and drunken goat cheese and are the perfect solution for a salad without all the mess, and dressing swimming at the bottom of a bowl!
Serves 1 or 2
- Cherry tomatoes – 4 to 6, cut in half
- Spinach leaves – 8 to 12
- Drunken Goat Cheese, or your favorite – ¼ pound or less, cut into half-inch cubes
- Fresh Oregano leaves – 8 to 12
- Toothpicks – 8 to 12
- Olive oil – 1 teaspoon
- Salt to taste
Place a toothpick through the cheese cubes first. (I chose this cheese because it is semi-soft and will not crumble when inserting a tooth-pick but mozzarella is good too). Next slide the halved tomato, then the spinach leaf, and place the tiny oregano leaf on top of the cheese. Place these lovelies on a plate, and drizzle a little olive oil, and sprinkle a little salt and they are ready!
