Spring Peas, their pods, and the whimsical pea tendrils always inspire me to create new recipes just so I can showcase their vibrant color, and the magical design. Minted Peas became this year’s creation, but then I couldn’t stop there… I created a yummy Spicy Shrimp Appetizer with the minted peas, so that this delicious dish could have options:

Minted Pea Ingredients

Yields 2 cups

–        Peas – 2 cups, steamed 7 minutes

–        Fresh Mint – ¼ cup chopped fine

–        Salt – 2 teaspoons

–        Chipotle Pepper Powder – 2 teaspoons

–        Garlic – 1 clove, crushed

–        Lime juice – ¼ cup

–        Olive oil – ¼ cup


Place all ingredients into a blender or food processor and puree.

This mix is now ready as a dip for a crudité platter, a side dish, or the filling for Spicy Shrimp Appetizers.

Spicy Shrimp Ingredients

Yields 20

–        Wonton Wrappers – about 20 for the pea appetizer recipe above

–        Grated Garlic Salt to taste

–        Shrimp – as many as the wonton wrappers you will use, raw

–        Olive Oil – 1 tablespoon for shrimp, and more to brush on the wonton wrappers

–        Salt – 2 teaspoons

–        Old Bay Seasoning – 1 tablespoon

–        Garlic – 1 clove, crushed

–        Lime juice – half a lime


Place wonton wrappers onto a parchment paper lined baking sheet, and brush a little olive oil onto each one. Sprinkle a little garlic salt onto the wonton wrappers.

Set the wonton wrappers down into a muffin pan to form them into an appetizer size cup. Bake at 350 for 7 – 10 minutes until golden.

Place raw shrimp into a bowl. Add 1 tablespoon olive oil, salt, Old Bay Seasoning, garlic, and lime juice. Toss, and saute over high heat for about 5 minutes.

Arrange Appetizers

Spoon a little Spicy Mint Pea puree into each baked wonton. Top each with one cooked shrimp, and finish with a sprig of mint, pea tendril, or any garnish of your choice.

Crunchy. Spicy. Delicious!!

Chilled Pea Soup

Simply swap out the lime juice from the Minted Pea Ingredients and add 1 cup of cream. A little dollop of Cream Fresh or Mascarpone on top with a pea tendril for garnish. Lovely!
